Lunch and Spa Afternoon at Una, St Ives
Perched proudly on the outskirts of Carbis Bay, you’ll find Una St Ives, the Cornish holiday resort with a bright future. Una is home to a selection of eco-lodges, villas, an award-winning restaurant, a 15-foot infinity pool, and offers several spa treatments within their countryside grounds.
I was fortunate enough to visit Una St.Ives last year for a laidback Sunday dinner; since then, Carbis Bay has fled into the limelight by hosting the world leaders at the G7 Summit in June 2021. The Una team has huge plans for the future and expects to see Una grow into something completely out of the ordinary.
Una recently invited me to join them for a press lunch to trial their new menu by Cornish head chef Glenn Gatland. Glenn has won multiple AA rosette awards and with a wealth of foodie experience, now leads the restaurant team at Una. Turning classic cuisine on its head, Glenn produces Mediterranean-inspired wood-fired dishes that champion local, seasonal produce.
We started the afternoon with a St Ives Gin out on the Una restaurant terrace, surrounded by wildflowers. In true Una style, Glenn presented contemporary dishes with a fine dining, yet laidback feel. We began with Wood Roasted Cornish Scallops with charred sweetcorn, salsa, and homemade focaccia - delicious!
The second dish was Ton Mozzera, cantaloupe melon, extra virgin oil, and aged balsamic vinegar. So many flavours but they complimented each other perfectly.
Next up was the Smoked Pancetta Monkfish, Canara farm pea, and broad bean veloute and cavlo nero. So many complimentary flavours!
My favourite dish was the fourth - beef ragout, parpadelle, truffle oil, and pickled vegetables. I am a sucker for an Italian dish! Glenn later came out to inform us that all of the dishes were made in the wood-fired oven. I honestly thought that only pizza could be produced in an oven of this sort!
To finish off the lunch we were presented with a warm chocolate & bergamot mousse with cornish gooseberry compote. I’m not usually one for desserts but this was beautiful, especially with the sour taste of the gooseberry against the chocolate.
With a mix of classic dishes, specials, wood-fired pizzas, or their famous Sunday Roast, The Una Restaurant has something for everyone. By day relax with a coffee in their restaurant before an evening of wine and cocktails.
After lunch, I was lucky enough to be treated to one of their Elemis Spa Treatments - if you follow me on Instagram then you’ll know that my skin routine includes several Elemis products, so I was very excited for a massage. I opted for the full-hour body massage and oh my goodness, was it bliss!
